The Environmental Working Group, a non-profit organization focused on environment and public health, recently came out with their Cleaners Hall of Shame list. Super Easy Pancakes

My kids absolutely love pancakes and when I found this recipe I was beyond excited because they’re super easy and made from scratch so I know exactly what goes into the batter!

My son Jacob and loves helping me to prepare them and he’s quite a professional by now at making them 🙂


These pancakes a very fluffy, in a good way. The edges are not crispy. They are simply amazing!

Ingredients:
1 cup all purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup of milk
1 large egg
2 tablespoons vegetable oil (we use coconut oil)
1/4 teaspoon vanilla extract
1/2 cup of blueberries (optional)

Directions:
1. In medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In small bowl, whisk milk, egg, oil, and vanilla until well combined.
2. Add milk mixture to flour mixture and stir gently with rubber spatula until just combined (Batter should remain lumpy). Let it sit for 10 minutes before cooking.
3. Spray 12 inch nonstick skillet with vegetable oil and heat over medium heat until hot, about one minute.
4. Use 1/4 cup dry measuring cup to scoop 1/4 cup butter in the skillet. Repeat two more times, living space between mounds of better (you want 3 pancakes To cook up separate from one another)
5. Sprinkle each pancake with 1 tablespoon blueberries. Cook until bubbles and surface begin to pop, 2 to 3 minutes.
6. You spatula to flip pancakes and cook until golden brown, 1 to 2 minutes. Transfer pancakes to plate. Repeat with remaining better in two more batches.

You can also change it up by adding chocolate chips, chopped nuts, shredded coconut, sliced bananas, or raspberries instead of the blueberries use 1 tbs of add-ins for a pancake. Have fun and try your own combinations!!

Super Easy Egg Salad

I LOVE a good egg salad. I’m very picky what’s in it so I love to make my own. Here is a super easy recipe I use.

Ingredients:

8 hard-boiled eggs, peeled
1/3 c. mayonnaise
2 tsp. whole grain mustard
1/2 stalk of chopped celery, minced
2 tbsp. finely chopped chives

Optional: Few slices of Over Roasted Turkey

Instructions:

* First off you need to boil your eggs. I put them in my Air Fryer at 270 degrees for 15 min and BAM! Beautiful “boiled” eggs!

* Roughly chop hard-boiled eggs and transfer to a medium bowl. Mash slightly with a fork to break up yolks.
* Add mayonnaise, mustard, lemon juice, celery and chives and mix until evenly combined. Season with salt and pepper.
